Nice Weather

Thank the Lord for nice weather! With all of the rainy weather, children have been getting cabin fever.

 I love nature, and am always amazed with the Lords creations. My sister took a picture of this tree. I love trees and they seem to have their own personalities and characters.

Blueberry Pie!

We've been trying to find out different ways to use our blueberries, other than in muffins and smoothies. So mom went to Joy of Baking and we made a delicious pie. I love pie birdies and used mine that mom got for my birthday. I would love to start collecting them.

Blueberry Muffins......YUM!

We got blueberries from our order, eight pounds of them! So mom requested that we make blueberry muffins the next morning. They were so yummy and moist, I'd like to share the recipe with you.

Blueberry Muffin Recipe

2 cups oats
2 cups filtered water
1 tablespoon whey or plian yogurt
1 handful of flaxseeds

Combine ingredients in bowl, cover with a towel, and let it sit on the counter overnight.

2 eggs
1/2 cup melted coconut oil
1/2 cup honey
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
2 or more teaspoons cinnamon
2 cups or more blueberries
2 cups or more of kamut, wheat or GF flour

In the morning,add all ingredients to the soaked oats. Add enough flour to get a nice consistency. Fill muffin tins 3/4 to all the way full, depending on how large you want them. Bake at 325 degrees for about 15 minutes. Our oven gets pretty hot, so adjust heat and time according to your own ways. They will be pretty moist from the berries.

 They are delicious topped with  cream cheese and a little honey. This recipe, without the berries, is our basic formula for muffins and we just add whatever add-ins we have. Enjoy!

On Thursday, our sweet friends offered to pick up our Azure order. But they did way more than just that! They made us soup, gluten-free cookies, and even gave us a box of baby clothes! Friends are such blessings!
