I wore a black puffed sleeved shirt, and my black and white skirt from Day 1, except I didn't wear it high- waisted.

And little Olivia wore this cute dress that Momma made her.... out of an old button up!

Also, please keep my Momma in your prayers. She's had a stomach bug for a few weeks now, and is feeling weak. Your prayers for healing would great!
Praying you have a wonderful week!

Pumpkin Soup

The leaves are changing colors, and there is a gentle breeze... I think Fall is on it's way! And Pumpkin Soup is perfect for this time of year! Here it is...

Pumpkin Soup

What you need

3 medium pumpkins
5-6 cups chicken or vegetable stock
1 cup heavy cream (optional)*
1 Tbls garlic powder
1 Tbls cinnamon
1 tsp pepper
1 tsp chili powder
1/2 tsp curry powder
salt to taste

What to do

  1. Cut open your pumpkins and scrape out the seeds.
  2. Chop the pumpkins into quarters and place them (upside down) in a large roasting pan.
  3. Pour about a 1/2 cup of water in the pan and put the lid on.
  4. Bake at 350* for 30 minutes, or until the pumpkin meat is very soft.
  5. While your pumpkins are baking, make up your seed topping (recipe at bottom of page).
  6. Carefully scoop out the meat from your pumpkins and put in your soup pot.
  7. Once you have all of your pumpkins scraped, whip out your trusty potato smasher and smash away!
  8. Add in the broth, cream and spices.
  9. Since I don't have a blender that works, I used my handmixer to give it a smoother consistency.
  10. Let the soup simmer for about 10 minutes, just so it can thicken up and the spices can mingle together.
  11. Top with a large scoop of your toasted seeds, and salt to taste.
  12. Enjoy

*Note: You can omit the cream if you are lactose intolerant. You will have a thinner soup, but it will taste just as good!

Seed Topping

2 large handfuls sunflower seeds
1 large handful chopped almonds
2 tsp cane sugar
1/2 tsp cinnamon
1/2 tsp oil

Mix all of these ingredients together and spread out on a cookie sheet. Bake at 350* for about 8-10 minutes, just until the seeds are toasty. Spoon a large scoop onto your soup to add a nice *crunch*!
You can also use whatever seeds/ nuts you have on hand. Pumpkin seeds with pumpkin soup is great!

This is a fairly easy recipe, so yummy and nourishing to the body! Do you enjoy Fall?
Blessings- Layla

Rabbits!

Since we can't have goats, we decided to switch to rabbits!(and, their called bucks and does too!!)
We got two bucks and three does, each of us kids got to name one!
We are so blessed by these rabbits, we got three for free, along with three cages, three water bottles and a little feed! Isn't that a huge blessing?!?!
And they are all so sweet!!

This is little Thumper. Layla named him.  :)

This is Peanut Butter Cup. I named her.  :)
We have not bread her yet, she's a little to young.

And Gabe named this (not so little) rabbit Belka. Not to sure where he got the name!
This doe and...

Matilda named this doe Strawberry. She's the feisty one!
this doe are both pregnant! Baby rabbits next month!!

Eli named this little guy Tiger. :)

Aren't they just so cute! Peanut and Thumper are the best! And they were only $10! :)
I'm really excited about getting into the rabbit business, we are breeding them for meat.
We are planning on using their skin for bags, blankets, and other things.
Just keep in mind I said "planning!" :)
   Well gotta go! Blessings~ Hagen

Creamy Corn Tortilla Soup

The other night my mom wanted to make soup, but we were out of broth. She came up with a delicious, creamy soup. Here's the recipe:

Creamy Corn Tortilla Soup

What you need:
1 lb. mild breakfast sausage
1 teaspoon chili powder
1 garlic clove
1-3 jalapenos (depending on heat)
1 green onion
1-2 bellpeppers ( The more color, the better!)
1 handful of cherry tomatoes or 2 Roma tomatoes
10-12 cups whole milk ( Raw is the best!)
6-8 corn tortillas

What to do:
Brown sausage in your soup pot. While the meat is cooking, chop up your vegetables. When the meat is done, add in the vegetables and spices. Saute for 5-7 minutes, making sure the garlic doesn't burn. Pour in the milk and stir. While the milk is warming up, chop the corn tortillas into strips. Add tortilla strips to the soup and let it simmer 10-12 minutes, until the tortillas are tender and start to breakdown. Serve with sliced avocados or guacamole.

This soup uses only one pot! It's so easy and so tasty!
If you try it, please let us know how you liked it.
Blessings-Layla
