What She Wore Wednesday ~ Ruffle Shirt

Alrighty folks, I am truly sorry that we missed yesterdays outfit post! We have been doing some spring cleaning.... But we were stopped dead in our tracks by an ice storm last night...

Okay, Layla wore a really cute ruffly shirt that she made herself, a fashionable tan skirt, and her awesome combat boots...


Her french braid half-up and leaf earrings make it even more... well, Her! :)

What She Wore Wednesdays~ Lace Scarf

Happy Wednesday y'all!

So, today I went to town with mama...
 And she was able to get my pics for me while we were out! :)
We were just in time for the golden hour!

I wore (dare I say it) a pair of jeans... My favorite pair by the way! ;)
A grey shirt, a lacy scarf that my beautiful friend made. My jean jacket and a pair of flats...



I really like this outfit! It is modest, cute and SO my style. :)

         My hair was wavy because I had it in braids, I love the effect... 
P.S. Do you notice anything different about me in this picture?


When I wear pants I usually wear a size to big.
Especially since jeans are made so tight now...:(

Recipe: Grain- Free Zucchini Muffins

Today I tried something new, something I have been reluctant to try for quite some time...
Zucchini Bread

Actually, Zucchini Muffins. They turned out to be a hit! I found the recipe from The Roasted Root,
it was a guest post from Seaweed & Sassafras.
Her recipe called for almond flour and Greek yogurt,  but I had to use pecan flour and keifer. The were DELISH! Okay, time for the recipe...



Grain- Free Zucchini Muffins
Makes one dozen

1/2 cup raw sugar
3 eggs
3/4 cup + 1 Tbsp keifer
1 1/2 cup shredded zucchini
1 tsp cinnamon
1/2 tsp powdered ginger
1/4 tsp nutmeg
1 1/2 cup pecan flour (or almond) 
1/2 cup coconut flour
1 tsp baking powder

Topping:
1/4 cup chopped almonds
1 Tbsp raw sugar
1 tsp cinnamon  

1. Heat oven to 325*
2. Place muffin cups in muffin tin.
3. In a bowl, wisk together first 3 ingredients until sugar is dissolved.
4. Add zucchini and spices to the wet ingredients.
5. In a large bowl, mix together your flours and baking soda.
6. Add wet ingredients to the dry, mixing until incorporated.
7. Divide batter into muffin tin evenly.
8. Sprinkle on almond topping.
9. Bake for 30- 35 minutes.
10. Enjoy!

 Now grab your favorite thermos, fill it with some herbal tea, and enjoy yourself!

Recipe: Sourdough Pancakes


 
 In request of a friend, 
I am posting this yummy recipe...
It is quite delicious. I hope you enjoy!

Sourdough Pancake Recipe 

2 cups sourdough
3 eggs
1/4 cup kefir
2 tsp. cinnamon
 3 Tbsp. honey- depending on how sweet you 
want them and if you have syrup or jam to put on them.
 1/4 cup coconut flour- also depending on
 how thick you like your pancakes.
 2 tsp. baking soda

Mix sourdough, eggs, kefir, 
and honey in a large bowl. 
(I did not measure my honey.
 You might want to do more.) 
Add cinn. flour. (I will say that I did not measure my flour, you can just do how ever much you think you should do.) Mix thoroughly.
Obviously I don't measure very much... :)  
  
Heat your griddle up to 250* and butter it.
Scoop a spoonful of batter and plop it on!
Cook until both sides of your pancake 
are equally light brown.

Put them on a plate, slab some butter on 'em, spread some Cranberry jam 
or pour some blueberry syrup on 'em!
      Serve & enjoy!

~You can use the same recipe for the cranberry jam as for blueberry syrup, just add a little bit more water and replace the cranberries with blueberries of course! :) ~
